Sesame Beef Burger with Pickled Slaw and Chips

Sesame Burger

- Preheat the oven to 220c/200c (fan assisted)/ gas mark 7.
- Cut the potatoes - keep the skins on, these are your chips.
- Add the chips to a baking tray, drizzle oil and season with salt and pepper.
- Mix them around to ensure even coating and put in the oven for 25-30min (or until golden).
- Whilst the chips are cooking, trim and slice the spring onion and grate the ginger.
- Add the beef mince, spring onion, ginger, and bread crumbs to a bowl with 1tsp of sugar and a little pepper.
- Mix thoroughly.
- Divide the mixture into even patties and sprinke sesame seeds over the top.
- Put the patties in the over for 15-20 mins, ensuring there is no pink meat.
- Whilst the burgers and chips are cooking, add half the sriracha in a bowl with the rice vinegar and a pinch of salt.
- Peel and grate the carrot.
- Peel lengths of the cucumber into ribbons.
- Add the grated carrot and peeled cucumber to the bowl with the sriracha and rice vinegar and mix well and let it sit , this is your slaw.
- Cut the brioche buns in half [horizontally].
- Heat a large pan over a medium heat, add the sliced buns sliced side down for 3 mins or until lightly charred
- Mix the remaining sriracha with the mayo to make a spicy mayo for the burger
- Drain the liquid from the slaw.
- Serve.
